This easy, no-bake pencil rice krispies treats recipe is a fun and simple snack idea for your back-to-school party.

You can’t go wrong with gooey marshmallows and crispy rice cereal covered in white chocolate.

I used to make these for my class on the first day of school and the kids absolutely loved them. I also made them these apple-shaped truffles and back-to-school treat bags one year. And we always took back-to-school photos using these free printable first day of school signs.

Ingredients For The Back-To-School Rice Krispie Treats

6 Cups Rice Cereal
10 Ounces Marshmallows
5 Tablespoons of Butter + extra for spatula (salted or unsalted)
4 Ounces Yellow Candy Melts
2 Ounces Pink Candy Melts
1 Ounce White Candy Melts
1/4 Cup Chocolate Chips

How To Make The Pencil Rice Krispie Treats For The First Day Of School

Line a 9×13 inch baking pan with parchment paper. Be sure to leave a little bit of extra paper on the sides of the dish, so the treats will be easy to pick up.

Place a large pot on the stove over medium heat. Put the butter in the pan and let it melt completely.

Add the marshmallows to the pan and stir until completely melted.

Remove the pan from the heat and quickly add the rice cereal to the pan. Use the spatula to mix the ingredients until the rice cereal is combined with the marshmallows.

Pour the rice cereal mixture into the parchment-lined baking pan. Use the spatula to spread and flatten the rice cereal mixture.

Allow the marshmallow cereal treats to cool.

Once they’ve cooled, pull the rice cereal treat out by lifting the parchment paper on each side and lay it on a flat surface.

Use a knife to cut the treat into four long strips about 2 inches wide. Cut off any extra that’s left over. Then, cut the ends of each strip to make sure they are straight.

Cut the strips in half. They should be about 5 1/2 inches long and rectangle shape.

On one end of the rice cereal treat rectangle, use a knife, held slightly diagonally, to cut off both corners and create the pointy end of the pencil.

In a microwave-safe bowl, melt the yellow candy melts in the microwave in 30-second intervals until it is melted and smooth.

Pour the yellow chocolate into a piping bag and cut a small hole at the tip. Be careful not to get the candy melts too hot or it will burn your hand while piping.

Pipe a line across the rice cereal treat where you want the yellow part of the pencil to begin and pipe another line where you would like it to end. (Be sure to leave space at the top for the eraser.) Fill in the entire area with the yellow candy melts.

Place the pencils In the freezer for 5 minutes to allow the yellow candy melts to set.

Using the same melting instructions above, melt and bag both the pink and white candy melts.

Pipe the pink candy melts in the empty area at end of the pencil treat to create the eraser. Place them in the freezer for 2-3 minutes.

Pipe the white candy melts across the area where the yellow chocolate ends and the pink chocolate begins. Pipe the lines as thick as you would like. This will serve as the metal area on a pencil between the eraser and wood.

Melt the chocolate chips in the microwave in a microwave-safe bowl for 15- 30 seconds. Stir the chocolate with a clean and dry spatula to make sure it’s smooth

Dip the pointed end of the pencil treats into the melted chocolate to create the look of a sharpened pencil lead.

Let the chocolate set before serving.

Notes

  • These rice cereal treat pencils can be stored in air tight container in a cool dry place for 3-4 days.
  • If you don’t have parchment paper, you can use the extra butter to grease the baking dish. It will allow the rice cereal to easily be removed.
