Fudgy Cosmic Brownie Cupcakes
If you ask me, dessert is the best part of any party, and what better way to sweeten up a birthday or any special occasion than with these nostalgic cosmic brownie cupcakes made from scratch?
They’ll remind you of those classic Little Debbie cosmic brownies, BUT better! They have everything you could want in a brownie cupcake—rich, fudgy, and exploding with color.
Plus, they’re super easy to make so you can whip them up for a birthday party without having to get out a piping bag or have any cake decorating skills. They’re so simple that kids can even help!

Things You’ll Need To Make The Fudgy Cosmic Brownie Cupcakes
For the cupcakes
1 ½ C. sugar
1 ½ C. flour
¾ C. Hershey’s dark cocoa powder
2 eggs
1 tsp baking powder
½ tsp salt
¾ C. milk
¾ C. water
¼ C. oil
1 tsp vanilla
For the topping
1 C semi-sweet chocolate chips
½ C heavy cream

How To Make The Cosmic Brownie Cupcakes
For the brownie cupcakes
1. Preheat the oven to 350 degrees. Line standard cupcake pans with cupcake liners and set aside.
2. In the bowl of a stand mixer, combine the sugar, flour, cocoa powder, baking powder and salt.

3. Add in the eggs, milk, water, oil, and vanilla. Mix well, scrape down the sides, and mix again.

4. Divide the batter between the cupcake liners and fill until about 1/2 – 2/3 full.

5. Bake in the preheated oven for 14-15 minutes or until the center is set and a toothpick comes out clean.
6. Allow to cool before decorating.

For the frosting
1. In a medium bowl, combine the heavy cream and chocolate chips. Heat
in the microwave for one minute. Stir well until the mixture is smooth. Allow to cool slightly before decorating.


2. After the brownie cupcakes are cooled, scoop a spoonful of chocolate ganache over each cupcake and spread evenly over the top.
3. Sprinkle the candy-coated chocolate chips over the ganache.

4. Serve and enjoy!
