Melt the strawberry candy melts in the microwave for 30 seconds. Stir and microwave at 15 second intervals until just melted. You don't want these to get too hot or they won't set up properly.
Line a small size baking sheet with parchment paper.
Pour out the pink strawberry candy melts onto the parchment paper and spread in an even layer.
Crush about 1 cup of the freeze dried strawberries and sprinkle onto the top of the pink melted candy. Crush half the package of shortbread and sprinkle on top as well. Place some of the full strawberry slices on top. Be sure to press them in some to make sure they stay.
Let the chocolate bark set for 20 minutes. Do not freeze or refrigerate or the strawberries will become chewy from the moisture.
Melt white chocolate wafers the same way you did the pink wafers and drizzle on top in any pattern you like. You can use a spoon, drizzle out of the bowl, or put the white chocolate in a piping bag and cut a small hole. Drizzle over the strawberry slices to help hold them in place.
Let it set for another 20 minutes.
Once set, break into pieces.
If the chocolate wasn't heated to too high of a temperature, it should be stable and hard at room temperature.
