Ingredients

  • 2 3/4 cups all purpose flour
  • 1 tsp. baking soda
  • 1/2 tsp. baking powder
  • 1/4 tsp. salt
  • 1 cup unsalted butter
  • 1 1/2 cups granulated sugar
  • 1 egg
  • 1/2 tsp. vanilla extract
  • 2 tbsp. lemon zest
  • 2 tbsp. lemon juice

Instructions

  • Preheat your oven to 350 degrees Fahrenheit, and line a cookie sheet with parchment paper.
  • In a large mixing bowl, cream together the butter and sugar, until fluffy.
  • Add the egg, vanilla, lemon zest, and lemon juice, and mix until combined.
  • In a separate bowl, whisk together the flour, baking soda, baking powder, and salt.
  • Slowly add the dry ingredients to the wet ingredients, mixing until just combined.
  • Use a 1 1/2 inch cookie scoop to scoop the cookies onto the parchment paper, placing them at least 2 inches apart.
  • Bake for 8-10 minutes until crackled, but not brown.
  • Allow the cookies to cool on the cookie sheet for 5 minutes before transferring to a cooling rack.
