I’m a little picky when it comes to pancakes. It seems they are either too dense or too flat. After a lot of research and trial and error, I finally came up with a recipe that has just the right amount of fluffiness, is simple to throw together and comes out perfectly every time.
When you get your batter mixed together, it will be a little lumpy. That’s ok. You want it to be a thickness that some will stick in the measuring cup when you go to pour it out. If it’s too thin, you’ll end up with flat pancakes and if it’s too thick they will be too dense. So it needs to pour but still be thick. Here’s what your batter should look like:Set your griddle to 350 degrees. You can tell it’s ready when you sprinkle a little water on it and the water dances and sizzles. For the bunny body, I used 1/2 cup of batter. For each ear and the head, I used 1/4 cup of batter. For the feet, I used 1/8 cup of batter. When I poured the batter for the ears onto the griddle, I poured in a line and then used my spatula to push it into more of a bunny ear shape. You can always give them a little trim with a knife after they finish cooking if they aren’t quite right.Place the pieces together and you have your easy and adorable Easter breakfast!
